They are very easy to use, even with arthritis and chop up things in different sizes and shapes in hardly any time. I use mine daily. I do a lot of canning and use my Borner V-slicer for mountains of spaghetti, pizza sauce & salsa veggies, not to mention the daily workout it usually gets. IMO Borner is the only brand to buy. After wearing out my first Borner I purchased a couple of different brands as I too got mine at a Home Show and couldn't find a replacement. The other brands weren't nearly as sharp as the Borner and were a complete waste of money. I finally found the Borner brand on eBay and bought two. I agree with Suzan, the others are waste of time and money.
