Figure out how much 16 cups of good whole wheat high gluten will cost you. That is about 8 pounds of flour. Compare the prices and then figure out how much your time is worth. You might save a dollar or two, maybe. I pay about $7 for a 22 oz bag of vital gluten flour and it made a very large roast -- 5 pounds is what it weighed after cooking. Just my opinion mind you. Guest guest Posted July 2, 2009 Report Share Posted July 2, 2009 If you live near a Whole Foods....or, actually, any larger store that has bulk items...see if they have VWG flour. If not, perhaps they would order it. My nearest Whole Foods is 50 miles away, but....5 minutes from my kids. I frequently stop there when I visit. I love their bulk aisle....the VWG flour is $3.19 / lb and I always buy a couple pounds. It keeps well, and my granddaughters just love it! Grin....a long time ago I learned that they were much more receptive to new foods if I had a funny name for it. When I first made seitan for them, I called it " Not-Real Monkey Fingers " ( I sliced it in thick strips).
