i use direct heat in a heavy sauce pan  - i can't imagine that you would get the

mixture to 240 in a double boiler.  Also, I add the hot mixture to the mixer a

little at a time, letting it whisk a little before adding more, taking about

30-45 seconds to add all of the mixture to the mixing bowl.  Good luck and be

careful it's very hot obviously
