Guest guest Posted February 5, 2009 Report Share Posted February 5, 2009 Potato Soup (which I just ate too much of) 6 - 10 potatoes depending on size peeled 2 medium onions 2 carrots 2 celery stalks 4 cups vegetable broth 1 cup water 1 tablespoon salt (I use sea salt) 1 tablespoon parsley Pepper to taste (I use ground mixed peppercorns) 1/2 stick butter Carnation Evaporated Milk Place potatoes, onions, carrots and celery in food processor until fairly smooth (can be a little chunky). Place all in crockpot. Add remainder of ingredients with exception of evaporated milk. Cook on high 3-4 hours, adding milk in during last hour. I start out adding one can, but usually end up with two. You can add another can if you reheat the next day, as the soup will last for a few days like this.
