I wanted bananna bread, and didn't have flour. I'm not usually good at

following recipes. they usually turn out awful, but if I improvise it always

works. I put 1/4 cup self-rising cornmeal, 2 cups oatmeal, not the quick

cook kind a cup walnuts all in the food processor with a teaspoon of baking

soda, and two teaspoons baking powder, 1/2 teaspoon salt. I blended this all

up until it was a flour like consistency. I then beat two eggs, a half cup

oil, two cups sugar, 2 teaspoons pumpkin pie spice, five banannas, mixed the

dry and wet, and baked for an hour in a 9 inch pan on 350. I had no idea

what I would get, but it is the best bananna bread I have ever had. Not a

diet food obviously, but I couldn't believe how great it turned out. I will

definitely be making this one again. It is also mega-filling.
