Rockin rice pudding recipe and cholesterol

My husband had his yearly physical this month (work mandated every

year) and we were thrilled that his LDL cholesterol went down 80

points in 2 years and his HDL went up almost 30 points. he credits it

to my cooking primarily vegetarian food. I will occasionally cook

chicken or fish for him and my 12 yo son. My 7 yo daughter eats very,

very little meat. We are thrilled with his cholesterol. Most of the

men in his family are on medication to lower their cholesterol.

 

This is a favorite of ours and I usually make a double batch to keep

in the fridge. We use it for breakfast or desert or whenever my 12 yo

is hungry.

 

Rockin Rice Pudding from Tyler Florence of Food 911

 

3 cups white rice, cooked

2 cups milk (I use powdered soy milk-reconstituted)

2/3 cup sugar

2 tablespoons butter

1 tsp vanilla extract

1/2 cup raisins (we leave out)

Zest of 1 lemon, grated (we leave out)

1 tsp cinnamon, divided (we use much more)

 

Combine cooked rice, milk, sugar and butter in a medium saucepan. Add

raisins and vanilla. Cook for 25 minutes until most of the liquid is

absorbed. Mix in lemon zest and 1/2 tsp cinnamon. Spoon pudding into

a service dish and dust with remaining cinnamon. May serve chilled or

at room temp.

Wonderful news for your husband! It's always good to get positive

feedback when you've made dietary changes.

 

And the rice pudding sounds great; I've got to try this. Thanks!
