Guest guest Posted May 6, 2009 Report Share Posted May 6, 2009 Snow Pea, Pepper And Cabbage Salad 2 tablespoons olive oil 1 1/2 tablespoons rice wine vinegar 1 teaspoon salt 1/2 packet sugar substitute 1/2 pound snow peas 3 cups shredded green cabbage 1 red bell pepper, thinly sliced 3 green onions, thinly sliced 1/4 cup fresh chopped mint Mix olive oil, vinegar, salt and sugar substitute in a small bowl. Place snow peas with enough water to cover in a microwave-safe bowl. Cover with plastic wrap; microwave on high one minute. Drain and slice in thirds lengthwise. Mix snow peas, cabbage, pepper, onion and mint in a large bowl. Add dressing; toss to coat. Chill 15 minutes to blend flavors. Makes 4 servings. Calories 108, Fat 7 g, Carbs 9.5 g, Fiber 4 g.
