Good for you! Giving up cheese and dairy is so good for your health

and the cows!

I am vegan and have found most brands of non-dairy cheese still

contain cheese protein called casien. That is the protein that binds

the cheese and makes it melty. Unfortunately this is also the protein

that makes many people feel ill.

I like to make a cheesy sauce for my vegetables and to dip stuff in.

It's pretty easy to make. I am sure there are many recipes like this

but here's the link to my favorite.

I also sprinkle nutritional yeast on things when i want a cheesy flavor.

I have not found a commercial cheese I like but I am sure they are out

there. I live in a rural area so there aren't many stores that carry

this sort of specialty item.

Good luck with this!

Nina

Hi Karen,

I've found it very difficult to find a good non-dairy cheese that doesn't have

casein. I've decided that Soya Kaas has an insufficient amount of casein and a

sufficiently good taste. It melts pretty well and doesn't bother my stomach.

(I like to say that those of us who can't handle dairy are " normal " , and anyone

that can is " lactose tolerant " . lol) If you're a purist then this might not be

the choice for you, but otherwise you might want to give it a try. It's been a

little pricey lately, but what isn't these days. I don't enjoy it too much if

it's not cooked - but my 9 year old daughter loves it! I use it to make grilled

cheese, nachos...

Good luck!

Barbra

Hi, Karen!

Several years ago, I tried a non-dairy (soy) cheese and really hated it,

but recently

I found this brand: Lisanatti (hope that's spelled right) soy cheese at our

super Wal-Mart.

The one they stock here is the creamy-white " quesadilla " cheese.  I bought it

and was

VERY very pleased with it--the taste and texture is like REAL dairy cheese!

Getting the TASTE right was what I had doubts about, but this product

melts and does everything I'd want a cheese (or substitute cheese) to do.  I

love it and have put it in foods my DH has eaten, which is the acid test for

anything.  He doesn't like cheese much to begin with, but wants it on tacos and

some salads.  He's lactose intolerant, and I just told him this was a

lactose-free cheese that is LOW IN FAT.  He ate it and liked it.  I ate it and

LOVED it!  I can't wait to buy another package of the stuff--I'd be willing to

try other  " cheeses " from this company, but I've not seen any in stores locally

yet.

     Good wishes for your search!
