Guest guest Posted April 5, 2009 Report Share Posted April 5, 2009 1 bag crumbles (Quorn, Morning Star etc) 1 med onion, chopped 2 garlic cloves, finely chopped 2 tblsp. taco seasoning 2 c veg. broth 1 lg. zucchini or summer squash, cut into small cubes 1 15 oz. can black beans 1 14.5 oz. can diced tomatoes 1 c frozen corn kernals 1 c med. salsa Saute onion and garlic until onion is translucent. Add crumbles and sprinkle mixture with taco seasoning to blend. Add remaining ingredients and simmer, covered, stirring occasionally, 20 - 30 mins. Serve over rice if desired.
