Then I finally figured out my mother always cooked all veggies into mush and my lifelong loathing of veggies goes back to that tasteless green goop on my plate in my childhood. She said that's how her mother always cooked veggies, too. Now I'm learning how to really cook veggies I'm enjoying them more and am again considering trying to become vegetarian. It might take a while but I'm trying... I'm trying... I have no truly vegetarian recipes of my own yet so I'm stealing one from the latest edition of Vegetarian Times. How about a Valentine treat? Giselle ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ Vegan Chocolate Truffles (Makes 40 - 1 " truffles, gluten free) 1/2 cup chocolate soymilk 1 12-oz. pkg. vegan chocolate chips 1/2 cup unsweetened cocoa 1. Warm soymilk until hot to the touch. Set aside. 2. Melt chocolate chips in large metal bowl set over saucepan of simmering water, stirring until smooth. Stir in warmed soymilk until smooth. Cover, and refrigerate 4 hours, or overnight. 3. Place cocoa on plate.
