Guest guest Posted February 11, 2009 Report Share Posted February 11, 2009 Mushroom Salad with Peppers and Green Onions Dressing: 1/2 cup parsley 1/2 cup + 1 tbsp. safflower oil 3 tbsps. white wine vinegar 1 1/2 tbsps. Dijon mustard 3/4 tsp. dried tarragon 1/2 tsp. salt Salad: 8 green onions 1 medium red bell pepper 1 pound mushrooms shredded Swiss cheese Mince parsley add oil, vinegar, mustard, tarragon and salt.
