Hi there!

I'm the single mom of a vivacious and wonderful 2 1/2 year old who loves being a

vegetarian like her mommy! Actually, she loves vegetables and fruit over pretty

much anything - she even switched to eating cucumbers at her cousin's birthday

party over the cake (which was a really good gluten free one!). We eat as much

organic as possible, love trying new recipes (ok, I do more than my daughter!)

so this group is simply wonderful! I've been a vegetarian for over 20 years and

simply cannot think of living any other way - and with my daughter's natural

affinity for the same diet and lifestyle, I'm completely happy.

Thanks for sharing all your recipes - and wisdom, I'm sure!

I'll post a recipe when I have a bit more free time this weekend -

Thank you, one of my daughters is a vegan and the other is a vegetarian, and I

have no restrictions. So it can be difficult finding a good balance for our

meals.
