Guest guest Posted August 11, 2009 Report Share Posted August 11, 2009 Warm Mushroom Salad with Walnuts and Feta 2 tbsps. olive oil 1 tbsp. soy sauce 1 lb. fresh mushrooms, sliced 1 tbsp. honey 1 onion, chopped 8 cups torn salad greens or baby spinach 2 cloves garlic, minced 1/4 cup chopped walnuts 1/4 cup cider vinegar 1/4 cup crumbled Feta cheese Heat oil in large fry pan over medium high heat. Sauté mushrooms, onion and garlic in oil until mushrooms are tender, about 3 minutes. Whisk together cider vinegar, soy sauce and honey. Add to mushrooms, stirring constantly. Place salad greens in large bowl. Pour hot mushroom mixture over greens. Toss. Sprinkle with walnuts and Feta cheese. Serve immediately. Yields 6 servings.
