Guest guest Posted January 28, 2009 Report Share Posted January 28, 2009 This looks good! Any particular type of rice work better in a crockpot? I'm making a meetball stew in my crockpot today. I adapted it from one using t**key meatballs. I'm using the frozen Boca ones, but next time I think I'll try making my own. Does anyone have favorite recipes that make good meatballs? (i.e. hold together well). Crockpot Meatball Stew Place in bottom of crockpot: 4 med size potatoes (peeled and cut in bitesize pieces) (I used a little more) 1 carrot sliced (I used 2) 1-2 onions, diced (I used 1 onion) Mix together: 1 (16 oz) can crushed tomatoes (I used can organic stewed tomatoes and a few Tbs of tomato paste) 1 tsp each basil and oregano (I used Italian seasoning instead) 1/4 tsp garlic powder (I used a little more) 1 tsp Worcestershire sauce (I used a little more) Salt and pepper to taste (Note: I also added a small amount of wine vinegar and a little extra water/veg stock so there would be enough to cook the veggies and enough to make sauce) Put meetballs on top, do NOT mix in. Pour tomato mixture over the top. (I also had a few Italian " sausage " links leftover, I cut up and put under the meetballs.) Cook on low 8 to 10 hours. Before serving, mix together 1 T cornstarch and a little cold water. Add to stew, stir and let thicken. Makes 6 servings. I'll let you know how it comes out!
