Louisa and Marilyn - eggs!

Welcome, Louisa! I cook just for myself, too -- there are several of us on

this list, and we like to freeze individual portions, too. I dislike eating

the same thing for two meals, 3 days in a row... Any tips you have for using

up bread, eggs, vegetables, whatever, before they go bad would be welcomed!

:)

 

Marilyn, I like egg and cheese sandwiches, too. I used to just be able to

take or leave eggs, then I started buying free-range eggs, and picked up

brown free-range ones by mistake once -- wow, that's what eggs are supposed

to taste like! I love to fry them and leave the yolk runny -- I learned from

a cookbook how to make fried eggs that are not greasy. I put a little

nonstick spray in the skillet, then crack my eggs into it. Once the white is

pretty set (about a minute over high heat), I pour 2-3 tbsp water in the pan

and cover it for a minute. Perfect fried eggs, with no butter or oil (except

the little bit in the non-stick spray)!
