My name is Ann and I hail from the currently soggy northeastern corner of CT where it has rained nearly all summer. I work in the health care field and used to raise dairy goats for 35 years before a back injury made that no longer possible. Now I have just one cat and a very large yard in a sad need of mowing. While not a vegetarian, I was raised with a diversity of cuisines and will many times make meatless meals out of preference. My mother was the oldest of 11 children during the Depression and knew how to make a budget last to the end of the month. Wherever we lived, my father always had large gardens and my mother canned, froze, pickled or made jams and jellies out of nearly everything. My father used to make wines out of some of the strangest things and the wine jellies from the pulps were a treat as well. I wish I had paid more attention back then but I'm learning as I go along. One of my favorite dishes to make is whole wheat pasta dressed with a can of drained diced tomatoes, chopped onion and garlic, a can of drained and rinsed beans of your choice- I have used kidney and chick peas, and after mixing thoroughly, top dress with some Veggie Parmesan.If I want to go no frills I just use olive oil, garlic and the Veggie Parmesan. Many times when the weather is hot I just make huge salads and always put some kind of fruit with the greens for added interest. Thanks for listening nd allowing me to join the group!
