OK, the only thing I can see for meatballs is in spaghetti, and I only

use veggies. So, do you think this could work as a loaf?

You can make them into a wedge, I did this for dinner tonight.

We took some store bought veggie meatballs,

some roasted onions, broccoli and bell peppers,

some Vegan Mozzarella and my some garlic butter my daughter made earlier

tonight.

Placed all on a submarine roll and baked in the oven until the cheese was

melty.

It was delish.

Vegetarian walnut meatball recipe

Here is a recipe that I have made for years. It's one of my favorites!

Ingredients:

2 eggs, beaten

3 egg whites, beaten

1 small onion, finely chopped

3 T. parsley

1 1/2 t. poultry seasoning

2 garlic cloves, minced

1/2 t. salt

1 1/4 c. finely crushed reduced sodium saltine crackers

3/4 c. ground walnuts

3/4 c. shredded reduced fat cheddar cheese

Apricot barbecue sauce:

3/4 c. 100% apricot spreadable fruit jelly

1/2 c. ketchup

1/4 c. lemon juice

2 T. brown sugar

2 T. finely chopped onion

1 T. canola oil

1/2 t. salt

1/2 t. oregano

In a bowl, combine the first seven ingredients. Add the crackers,

walnuts, and cheese and mix well. Coat hands with non stick cooking

spray and shape mixture into 1 inch meatballs. Place in a 13 x 9 x 2 "

baking dish coated with non stick cooking spray. In a small saucepan,

combine the sauce ingredients and bring to a boil. Pour over the

walnut meatballs. Bake uncovered at 350 degrees for 25 minutes.
