Guest guest Posted August 14, 2009 Report Share Posted August 14, 2009 Greens With Pineapple, Apple and Feta Salad: 12 cups torn Boston lettuce leaves, about 2 heads 3 cups pineapple chunks 4 medium Red Delicious apples, cored and thinly sliced 2 small red onion, thinly sliced 6 tablespoons crumbled feta cheese Balsamic-Mustard Vinaigrette: 6 tablespoons balsamic vinegar 6 tablespoons water 4 tablespoons honey mustard 2 clove garlic, minced salt and freshly ground black pepper to taste To make the vinaigrette: in a small bowl whisk together the vinegar, water, mustard and garlic. Season with salt and pepper, if desired. In a large salad bowl, toss the remaining ingredients. Drizzle the vinaigrette on top and toss gently until evenly coated. Makes 8 servings.
