You'll be amazed at the amount of pretty dishes you can create with vegetables, fruit and pulses. My son has recently become vegetarian, and delighted himself by making a Nut Roast!! I have been surprised in my vegetarian recipe searches to find out how many wonderful dishes can be made from dried ingredients, like nuts or sun dried tomatoes or even dried chives. Somehow it always seemed to me that to be vegetarian I had to lug bucket loads of fresh produce home daily....silly me! Fresh is fabulous, of course, but I am learning that dried staples can be as easy or even easier than when cooking meat based recipes. I am looking for simple, tastey recipes that my family will love and will be either good to make ahead or quick in a pinch. Thank for letting me be part of the group.
