Well said, Donna. With meat prices soaring, I believe a lot more folk are going

to be coming to groups like this one for help in making nutritious meals with

less or no meat. Why would we want to alienate them at the outset? Supporting

each other.........

 

Anywho. Tonight's dinner is barley mushroom soup, Brandon's cheesey corny

corn muffins (corn muffins with creamed corn, a little diced jalapeno peppers

and cheddar/montery jack cheese) and triffle. No meat but lots of good flavor

and fiber. Since if I am cooking 1 meal, I try to do several for freezing,

everything is from the freezer except the triffle. I did make cake layers and

freeze them so it is partially cooked ahead.
