This is how I make mine: 3 large finely minced onions a little olive oil 1/4 to 1/2 cup sugar 1/2 tsp (or less) liquid smoke 2 cans (about 15 oz) tomato sauce (or less) salt to taste These measurements are approximate, it is one of the recipes I do by taste, look, smell, feel.... In large cast iron skillet, saute the onions in olive oil. Cook them until they are golden and add some sugar. Keep cooking until the sugar gets caramelized and the onions look browned. This will take a while but it is important to cook them really well. Now add a little liquid smoke and the tomato sauce. Use a regular blender or an immersion blender and get it smooth. Taste and see if it needs any more salt, tomato sauce or anything else. This comes out thick like commercial BBQ sauce but a lot tastier IMO. Variation: if you do not mind a little heat I much prefer to add some finely minced smoked peppers to the onion mix rather than liquid smoke.
