Guest guest Posted June 16, 2009 Report Share Posted June 16, 2009 * Exported from MasterCook * Peaches with Pomegranates and Rosemary Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 peaches 2 nectarines 1 1/2 ounces butter 2 tablespoons fructose juice of 2 oranges 1 sprig fresh rosemary 1 pomegranate 2 ounces pistachio nuts -- roughly chopped Wash and dry the peaches and nectarines and cut into slices. heat the butter in a frying or grilled pan over a low heat. Add the peaches and nectarines and heat through for 2-3 minutes. Add the sugar and leave to caramelise for 2-3 minutes. Add the orange juice and rosemary and simmer for 5-6 minutes, until the liquid begins to thicken. Remove the pan from the heat. Meanwhile cut the pomegranate in half and remove the seeds, discarding the pith. Divide the peaches and juice between 4 bowls, Sprinkle some pomegranate seeds and pistachios over the top.
