I just made zucchini muffins last night for the family and then couldn't eat them since I've decided not to eat dairy or eggs. It isn't overly sweet, but then that is what make it even taste better to me. It probably would have been sweeter if all of my bananas had been in the slightly overripe stage, but only 2 of my 5 were. You know how they get sweeter the riper they get. The best bananas for making banana bread are those where the skin is starting to turn black. This recipe is a keeper for sure.
