Guest guest
DAM AALOO Take medium size potatos and boil slightly less than complete, peel them off. In pan add some oil and add jeera, garlic, onions, turmeric powder and spices powder and fry. when done add tomato gravy and wait till gravy is fully cooked. Now add about 100gms of khoya (dried milk) and again wait till gravy is thick and ready. Add salt and pepper as per taste. You can also add 5 gms of sugar. Now add peeled potatos and simmer while covered for 10-15 minutes till completely done. In between you can use spoon to change the positions of potatoes so that gravy is applied uniformly and sticks around them. Add green corriander and serve hot with Roti or naan. Spice Powder 1/4 tsp black peppercorns 8 whole cloves 8 cardamom pods 1 tbs coriander seeds 1 tsp cumin seeds Put all the ingredients for the spice powder in a small pan and toast over medium heat, stirring constantly until fragrant, 2-3 minutes. Let cool and grind to a fine powder, then set aside.
