Here's my favorite soup recipe from " The Meatless Gourmet " cook book: Red Lentil & Barley soup, makes 6 servings: 2 teaspoons olive oil 1 cup chopped onion 1/2 cup chopped celery 4 garlic coves, crushed 61/2 cups water or vegetable broth 1 cup red lentils, uncooked 1/2 cup barley, uncooked 1 tablespoon dried basil 1 tablespoon dill weed 1/2 teaspoon salt 1/4 teaspoon pepper 1/4 teaspoon dried thyme 2 bay leaves Heat oil in a large saucepan over medium heat. Add onion, carrots, celery , and garlic. Cook, stirring frequently, 5 minutes. Add remaining ingredients to saucepan. Bring to a boil, then reduce heat to medium-low, cover, and cook 1 hour. Remove and discard bay leaves before serving. Each serving provides: 203 calories 12 grams protein 2 grams total fat (0 grams saturated fat) 36 Grams Carbohydrate 205 Mg Sodium 0 Cholesterol.
