Guest guest
There is a great recipe for carrot top soup that I tried in the summer. Here is the link (I think...there are a few and I am not near my recipe book): http://recipes.chef2chef.net/recipe-archive/13/078137.SHTML Paula , glpveg4life wrote: > > I bought carrots with the greens still on them can I eat them? > I was thinking of adding them to my roasted vegetable soup. > Or can they be eaten raw, maybe I will add them to my salad. > > Gayle > **************New year...new news. Guest guest
I have about a 5 gallon bucket full of fresh, beautiful carrot tops. I am dehydrating some to powder and add to my beet green powder. Is there any other use for them? I think I read somewhere that carrot tops are high in something (Oxalic acid??) so they can't be eaten in large quantities. Guest guest
Ah! Thank you! I'll make vegie stock today. I am almost out of vegie stock and the only powdered I can find has MSG in it and tons of salt. I " ll make some vegie stock and freeze it in ice cube trays for when I need it. My dogs love carrots so much my children can't make a snowman with a carrot nose. Our one dog tackled the last snowman with a carrot nose to get the carrot and eat it. The kids stood there in shock after all their hard work lay in a pile of snow with the dog sitting on top happily eating " his " carrot! When I harvest my carrots sometimes I freeze the tops in a bag and use them in stock later. Yesterday I added some fresh on my seitan stock. They add a little tangy note and make it interesting. Onions SKINS are also very good in stock (the yellow/brown ones only, not the red ones). > My dogs like most veggies (not onions and onions are bad for dogs) they LOVE carrots. If I give them a whole carrot just pulled out and washed they will carefully eat every little orange part and leave the greens. On the other hand, when I give them a radish, they will eat the whole thing, root and greens. Yes, they eat tomatoes and cucumbers too. > Back to carrot tops, for me it is either stock or compost, both are good uses, since my only animals will not eat them. > Roseta > >

I can just imagine the scene....LOL. I had not heard of other dogs liking carrots so much, glad to know my dogs are not weirdos (well, they are but for other reasons...) Happy stock making. By the way, I started to freeze my stock in the larger muffin tins, so i have 1 cup frozen 'stock pucks' that i put in baggies for using smaller amounts of stock. It works really well, as long as you have the freezer space to initially freeze them in the muffin tins. Roseta
