Guest guest Posted June 15, 2009 Report Share Posted June 15, 2009 Pasta with Fresh Tomato and Herb Sauce 1/4 cup olive oil 2 to 4 cloves garlic, finely chopped 2 lbs. ripe tomatoes, chopped 1/4 cup chopped fresh basil 1/4 cup chopped fresh parsley 1 tsp. chopped fresh oregano, optional 1/2 tsp. chopped fresh thyme, optional salt and freshly ground pepper to taste 1 lb. dried pasta of your choice, cooked according to package directions Heat the oil in a large skillet over moderate heat and saute the garlic for 1 minutes. Add the tomatoes and cook uncovered until the sauce begins to thicken, about 15 minutes. Stir in the herbs, salt, and pepper and toss with cooked pasta.
