Guest guest
Thank all of you for the ideas/suggestions for eggplant. I came to the conclusion after reading the replies, that I don't think I want to try eggplant. As with butter and cheese, anything I have to add a bunch of salt to I don't want. I'll have to pick a new veggie to try. Have a glorius day, Karen
Guest guest
es, I never use the salt either --- just skip that step. Eggplant is a great food --- don't miss out on it because it makes a very tasty meal! Cat

Guest guest
I've never salted it, either, just a tiny bit after cooking. Audrey S. Guest guest
I like to salt the slices and let them sweat for about 30 minutes before rinsing. I have always had good results doing that, and it doesn't turn into an overnight production. :-) -Melissa W
Guest guest
Karen, Try the slim Japanese eggplant. It is only the large ones that are sometimes bitter. Deb in Idaho
