Guest guest Posted August 20, 2009 Report Share Posted August 20, 2009 Quick and Simple Banana Bread 1/4 c. Soy Milk, or Rice Milk or Almond Milk 6 T. oil 8 T. Pure Maple Syrup 2 1/4 c. mashed ripe bananas(about 5 med. bananas) 2 c. whole wheat pastry flour or all purpose unbleached flour 2 T. Roasted grain beverage Powder - such as Roma 1 t. baking soda 1 t. non-aluminum baking powder 1/2 t. fine sea salt 1 c. chopped walnuts Preheat the oven to 350 degrees F. Lighly oil and 8 x 8 inch baking dish, dusting lighly with flour, shaking out the excess. Put the soy milk, maple syrup and bananas in a blender and blend until smooth. In a large bowl, whisk the flour, beverage powder, baking soda, baking powder, and salt until well combined. Add the banana mixture and combine, using as few strokes as possible, so you do not overmix the batter. Fold in the Walnuts. Scrape into the baking dish and smooth the top.
