Summer Vegetable Medley 2 tbs Canola Oil 1 Med White Onion < halved and thinly sliced > 1 clove Garlic < crushed > 1 Yellow Bell Pepper < Diced > 3 Med Zucchini Squash < sliced > Freshly Ground Pepper 1/4 tsp Salt 2 Tbs Fresh Parsley < I used Dried > 1 Tbs Fresh Mint < for garnish > Heat oil in skillet over med heat . Add Onion , garlic and bell pepper and sauté just until the vegetables are soft. Add zucchini and continue to sauté until zucchini is just tender. Season with salt and pepper and garnish with parsley and mint.. ** I used Red Bell pepper and added an extra clove of garlic and about 4oz of mushrooms.
