I substituted the eggs with flax seeds since I need to limit my egg consumption, and this way I can have this bread as often as I want. It comes out great with the flax seeds. I also used more spices because I like more spices....(more grated rind). This could be made vegan but I do not much like margarine and I am not sure if oil would substitute the butter well. ______ Fig Bread (from Tassajara Cookbook) 1 cup apple or orange juice (both are good) - I used 1 1/2 to 2 cups minneola juice (similar to mandarin oranges) my figs were pretty dry 1 1/2 cups dried figs, de-stemmed but left whole or halved - I cut them in quarters since my figs are on the large side... 1/4 teaspoon salt 1/4 cup butter or margarine - used butter 2 eggs - substituted with flax seed meal whisked with water 1/3 cup sugar - I used brown 1/2 teaspoon vanilla - used 1 tbsp 1 teaspoon lemon or orange rind, grated - used 1 tbsp 1 3/4 cups pastry flour - used all purpose unbleached 1/2 teaspoon baking powder 1/4 teaspoon baking soda Heat the juice almost to boiling and pour it over figs, salt and butter in a mixing bowl. Stir to melt and set aside in the refrigerator to cool. Beat eggs (or flax seed substitute), then beat in the sugar, vanilla and fruit rind. Stir this into well cooled (room temperature) fig mixture. Sift the flour together with the baking powder and baking soda. Mix into the wet ingredients with a minimum number of strokes.
