I took some eggplant, peeled it, cut it in about 3/4 inch slices. I put them in the microwave for about 3 minutes to dry them. I then fried them in olive oil. I put them on whole wheat toast with mayonnaise, American cheese, and Parm cheese. Wow!!! Now I am going to make myself another one. -- Marilyn Daub mcdaub My Cats Knead Me!!!
