Ingredients: 2 eggs, beaten 3 egg whites, beaten 1 small onion, finely chopped 3 T. parsley 1 1/2 t. poultry seasoning 2 garlic cloves, minced 1/2 t. salt 1 1/4 c. finely crushed reduced sodium saltine crackers 3/4 c. ground walnuts 3/4 c. shredded reduced fat cheddar cheese Apricot barbecue sauce: 3/4 c. 100% apricot spreadable fruit jelly 1/2 c. ketchup 1/4 c. lemon juice 2 T. brown sugar 2 T. finely chopped onion 1 T. canola oil 1/2 t. salt 1/2 t. oregano In a bowl, combine the first seven ingredients. Add the crackers, walnuts, and cheese and mix well. Coat hands with non stick cooking spray and shape mixture into 1 inch meatballs. Place in a 13 x 9 x 2 " baking dish coated with non stick cooking spray. In a small saucepan, combine the sauce ingredients and bring to a boil. Pour over the walnut meatballs.
