Guest guest Posted January 29, 2009 Report Share Posted January 29, 2009 Last night I had friends over for a Birthday dinner. I made what I am calling a Burrito casserole. I made two one for the meat eaters and one for the vegans. I took fat free refried beans and mixed in a packet of taco seasoning. I sauteed onions, mushrooms and zucchini with some garlic and then simmered it with taco seasoning. In a glass casserole dish I put down a layer of flour or corn torillas (my vegan friend is allergic to wheat), and then a layer of beans, layer of veggies, taco sauce and the pepper jack veggie cheese. Continue till dish is full and cheese is on top. As everything in dish is already cooked, pop in 350 degree oven till cheese melts and taco sauce bubbles. I served it with Spanish rice and guacomole. For the meat eater/meat substitute eaters/dairy eaters - I add a layer of Morning Star Farms Black Bean burgers chopped up, and use finely shredded mexican cheese. This recipe is super simple, can be made ahead and then heated, you can add what ever veggies or beans you and your family like. This is a great transistion dish for families who are trying to go veggie or a great potluck dish where there will be meat eaters. Guest guest Posted January 29, 2009 Report Share Posted January 29, 2009 For years even before I became veg I would make something similiar to this but called it Enchilada Bake. On the bottom layer ( and yes sometimes put hmbrgr) I would put enchilada sauce or salsa, a layer of either toritillas or some stale tortilla chips forgotten in the cabinet. Layer of refried beans, onions, cheese, another layer of tortillas, then either black beans or black eyed peas, another layer of onions and cheese. then more chips. top with more sauce, and cheese, and pop in 350 oven for about 30-45 mins. This was a really good one when all I had left in the cabinet was cans of beans and enchilada sauce or salsa. Who doesnt have these sitting inthe cabinet when all the rest of the good stuff is gone?
