I also need to lose weight, but that's a story for later. DH and I are retired living in a 5th wheel in the middle of the Gila National Forest. I read cookbooks, even if there is no plot or character development. Anyway one of my favorite recipes, DH will eat and its a big hit at potlucks even if they don't know what they are eating. Bulgar Pilaf 1 T EVOO 1 med chopped onion 4 cloves chopped garlic 1 C bulgar 1 1/3 C vegetable broth 1 can diced tomatoes Heat EVOO, in sauce pan, add onion, and garlic, cook till tender, add bulgar cook for 3 or so minutes, add broth, and tomatoes, bring to boil, turn down to simmer, cover, cook for 20 minutes or until liquid is gone, stir some.
