Guest guest Posted June 23, 2009 Report Share Posted June 23, 2009 I used my favorite hush puppy recipe (there are thousands online, mine has half self rising flour, half corn bread mix and a little sugar). To that I added a huge chopped Vidalia onion, then dropped teaspoons of the mix into hot oil. Cooked to golden brown on both sides then drained on paper towels. It was more like onion rings, since the onion to mix ratio was pretty onion-y. If you are lucky enough to have Vidalia, Maui Sweet or Wala Wala onions, you already know how good the sweet onions are. Yum. Carl has already eaten a dozen and I suspect he's going back for more. Yup, there he goes. Serving with Spanish rice, black beans and corn on the cob.
