Yes, peanut oil. It nakes them crispy and they absorb less oil.

Don't forget if you bread anything to add a little cornstarch in the dry

coating.

Round II: Zucchini " Crab " Cakes

 

 

Ok -- Round II with the zucchini cakes! :) Used about 2 tsp of Old Bay

(instead of 1 TBSP, which I thought was waaaaaayyyy too salty). Much better.

I do want to try them with the kelp powder, too. Also, the smaller you make

these suckers (like, flattened meatball-sized) the better they are. They fry

faster, crisper, and cool faster. And in peanut oil? To die for!! :)

Yes, thanks for the tips on peanut oil, Donna! :)

 

I did not bread these, just mixed the breadcrumbs, Old Bay and onion powder

(b/c I was too lazy to dice an onion) together, then added the egg and

zucchini into the mix.

 

For breading things, what does the cornstarch do?

If you bread mushrooms, eggplant slices, etc. The coating won't absorb as much

oil if you add a little cornstarch to the coating, then the peanut oil for

frying. Perfect!
