As for avocado's my daughter and I like to make Avocado and tomato quesadilla's, I sometimes like to slice up an avocado when I have rice and beans or when I make refried beans. I love the chocolate glazed cupcakes from Vegetarian Times (search their site). It uses an avacado and a little oil...delicious! I often experiment and remove some or all of the butter/margarine/oil with avacado. I made banana nut muffins the other day...very yummy and moist but slightly green. No one seemed to notice or care. It's funny that you mentioned avacados because last night I went to the Cheesecake Factory and they had awesome avacado eggrolls. Those had red pepper, red onion and were wrapped in wontons. They were delicious! Anyway, I love to make a sandwich with avocadoes--sort of like an " alt " . I also make burritos with avacados occasionally (with black beans). I think it would also be good cut up with some corn, onions, tomatoes, a little vinegar, cilantro,salt and sugar--sort of like a cold corn salsa. It's almost lunch, and I'm starving!
