also i found this interesting recipe - I'm going to try it!

 

BANANA RELISH

INGREDIENTS

 

    * 1 dozen bananas

    * 2 pounds Bermuda onions

    * 2/3 cupful molasses

    * 1/2 teaspoonful ground ginger

    * 1 pound dates

    * 1/2 pint water

    * 1 teaspoonful salt

    * 1 pint vinegar

    * 1 teaspoonful allspice

 

   1. Cut bananas, dates and onions into small pieces, add spices, vinegar,

water and molasses, mix well together.

   2. Turn into a large stone jar or crock, bake in a slow oven till a rich

brown, seal in jars while hot.

 

Yield: 4 qts.

I freeze mine and use them in smoothies.

I tried to freeze some extra banana (without peeling them though) and when I

defrosted them, the bananas sort of... melted, leaking a sugary syrup! Is it

OK when they behave like that??

Eww... sounds like just a bi-product of defrosting them. I never defrost

them, just use them frozen, and always peel them first, then wrap them

individually or in pairs in aluminum foil.

if i have a bunch, i puree them, then pour in either ice cube trays or the small

solo plastic cups, then freeze, then repackage as necessary... i rarely have a

lot though

 

i love bananas in savory dishes too, so i usually don't have any leftovers, I

usually eat them all up before they have a chance to get ripe :P

 

hope everyone is having a good day, we got about 4 inches of snow here !

It's snowing here right now -- about 16 degrees F last I heard. I don't

think we're supposed to get anywhere near Pete's 4 inches of snow, though. I

would rather have Donna's sweatshirt weather! :)
