Whole Wheat Apple Bread

 

 

Hi,

 

I made this this morning. Very tasty.

I found the recipes in Penzey's new catalog but not

in their online site. I did find it on cooks.com though.

I used Granny Smith Apples and pecans.

Whole Wheat Apple Bread

 

1 c. oil

2 c. sugar

3 eggs

3 c. whole wheat flour

1 tsp. salt

1 tsp. baking soda

2 c. chopped, peeled baking apples

(about 4 regular-sized McIntosh or Granny Smith)

1 c. chopped pecans (or walnuts)

2 tsp. pure vanilla extract

Preheat over to 350F

 

Grease and flour two 8 1/2 x 4 1/2 inch loaf pans and set aside.

 

In a large bowl, combine the oil, sugar and eggs.

 

In a medium bowl sift together the flour, salt and baking soda.

 

Gradually add the dry ingredients to the wet, mixing well after each addition.

 

Fold in the apples, nuts and vanilla.

 

Pour into the loaf pans and bake at 350 F for about 1 1/2 hours or until

a toothpick inserted in the loaves comes out clean.

 

Turn out of the pans while still slightly warm (wait 20-30 minutes) and let

cool.

Spoon into two greased 9 x 5 inch bread pans. Bake at 350 degrees for 1 hour or

until done. Turn out of pans before cooling completely.
