Oatmeal with long cooking Oats, Sliced apples, 2 pieces of whole wheat toast with apple butter on them. Or I will poach two jumbo eggs and have them on 2 pieces of whole wheat toast with apples, oranges, or grapefruit on the side. Sometimes I will put polenta on a plate and put two poached eggs on top of it. Usually oatmeal or cream of wheat, cooked up pretty quickly toss in some dried cranberries or other dried fruit at the start before I add the oatmeal. This morning, mine was spinach, mixed berries, a banana, an apple, flax seeds, and wheat grass powder. Gee, looking at that, it sounds kinda gross It was very tasty, though--Honest! Sweet and creamy! The night before put long-cooking oatmeal in the crockpot, cover with applejuice and cook on low overnight. You could throw in raisins, prunes or other dried fruit and ground flaxseed if you like. In the morning stir in plain or flavored yogurt to make it creamy. Another favorite is the oatmeal pancake recipe from Laurel's Kitchen, which is basically soaking some oatmeal in a bit of milk before adding it to the flour. Sorry, I don't measure things much anymore and do a lot of adapting as I go, so nothing turns out the same way twice! Again, I like to add ground flaxseed and maybe some nutritional yeast to the batter. We are blessed to have our own little flock of free-range chickens, so fresh eggs are always abundant and much appreciated at my house. The bright orange yolks of farm eggs are shocking to people when they first see them, but now we think the pale-yellow supermarket ones look anemic. I do a lot of breakfast quiches and scrambles with whatever fresh veggies are on hand, and this is part of my dogs' staple diet too. Guest guest Posted February 23, 2009 Report Share Posted February 23, 2009 My usual breakfast is a slice of toasted dark pumpernickel bread with cream cheese or a slice of whole wheat with peanut butter. When Carl is home I make a big breakfast with buttered grits, eggs, fruit of some kind and muffins or biscuits. We eat breakfast for dinner several times a week, complete with hash browns with peppers and onions and sometimes omelets filled with sweet diced red, yellow and green peppers, onions, mushrooms and cheese. When the kids still lived at home, once a week I would make up a large bowl of a mixture of pizza sauce and shredded mozzarella cheese and had baggies of everyone's favorite pizza toppings. I'd split English Muffins and put a large scoop of cheese mixture on top, then add the kids' preferred additions and bake until the cheese was melted and all was heated up. It isn't much different than cheese toast. Back then I could buy 4 packages of English Muffins for a dollar at the used bread store.
