Guest guest Posted December 26, 2008 Report Share Posted December 26, 2008 This is a great cheesecake recipe anyway, can leave out the peppermint extract if you want plain. 3/4 package Grasshopper cookies (mint chocolate cookies, like Girl Scout Thin Mints) 2 tbsp butter, melted 3 (8 oz) packages cream cheese 1 1/2 c white sugar 3 eggs 2 tsp vanilla extract 2 1/2 tsp peppermint extract 1 c sour cream Preheat oven to 325 F. Crush cookies and mix with butter, press into 9 " springform pan. Cream together cream cheese and sugar. Add eggs one at a time. Add vanilla and sour cream.
