I am wanting to try a new product, Polenta, and wondered if anyone has tried it before. Also any good recipes to use it in. Thanks so much and I look forward to hearing from everyone. Guest guest Posted January 19, 2009 Report Share Posted January 19, 2009 Here's a Polenta recipe that's quick, easy and tastes great: Italian Polenta Bake 1 tablespoon extra-virgin olive oil 1 (16- to 18-oz) ready-made plain polenta roll 2 tablespoons chopped fresh basil 1 (25- to 26-oz) jar pasta sauce 1/4 pound Mozzarella Cheese, coarsely shredded 2 tablespoons Parmesan Cheese Preheat oven to 450°F. Oil a 9-inch pie plate or a 4-cup gratin dish with 1 teaspoon oil. Cut polenta roll crosswise into 1/4-inch-thick slices and line pie plate with half of slices, overlapping slices slightly to completely cover bottom of pie plate. Stir basil into pasta sauce and spread 1/2 of that mixture over polenta, then sprinkle with half of mozzarella. Top with remaining half of polenta slices, then the rest of the pasta sauce, then sprinkle with parmesan cheese and remaining half of mozzarella. Bake until bubbling and golden, about 20 minutes. You can stir fry or steam mixed vegetables and use as a top or mix in with it. In the summer, I love chopped fresh tomatoes over it with parmesan cheese. About anything you can do with pasta or grits you can do with polenta. I was just at the grocery (Krogers) and was looking all over for Boca Burgers. They obviously didn't carry them. Are you talking about the polenta that comes fully cooked in a plastic casing, or the grain itself? They would have different applications. I put grilled zucchini (cut length wise, use a bit of oil and salt and pepper) on the plate, put the grilled polenta on top of that and top it with sauteed mushrooms (usually done with onions and Montreal ste*k spice).
