Hi there

 

my name is Sybille and I am after some new inspiration for vegetarian

recipes.

 

Here is my first recipe for a very easy and quick veggie curry which

serves 4. Instead of cauliflower you can use different vegetables.

Enjoy :-)

 

1 tablespoon of olive oil

1 onion finely sliced

2 tablespoon mild curry paste

400g can of tomatoes

1 medium cauliflower cut into florets

1 cup of water

200g baby spinach

1 tablespoon chopped coriander

Some yoghurt to serve

 

Heat oil in a large saucepan, add onion and over medium heat cook

until softened. Add curry paste, cook for about 1-2 minutes,

continuously stirring. Add tomatoes, cauliflower and 1 cup of water,

bring to boil, then reduce heat, cover and let the curry simmer for

around 10 minutes. Season with salt and pepper, remove from heat and

just add spinach and chopped coriander. Stir the curry and top with

some fresh coriander leaves and yoghurt to taste.
