Guest guest
Chanda, I will have to try your recipe next time. I'm happy you enjoyed the beans. Think you can find some in your area? Here is how I made them, and I am filing this recipe now because I don't want to lose it! half bag pre soaked maya coba beans 1/2 cup salsa 1/4 cup soy sauce 1/4 cup cooking wine 2 tablespoons taco seasoning mix 2 teaspoons oregano 2 teaspoons cilantro 1 head ROASTED garlic 1 medium onion grated 2 1/2 cups strong broth ( I make mine with better than boullion veg flavor and water.) 3 tablespoons olive oil just throw it all together in a pot and get it to a rolling simmer, cook until desired doneness, about an hour or a little more. When liquid is down to where you want it, then cover to finish cooking. These were just so good over baked potatoes! Thanks Donna for introducing me to this bean! hugs, Chanda
