I don't know the calories or anything like that, it just tastes light. Pasta for two people, cooked al dente 1 1/2 Tbs Olive oil 1/4 tsp oregano 1/4 tsp red pepper flakes or 1/8 tsp ground red pepper 3-4 cloves garlic chopped fine 1 small onion diced 10-15 cherry or grape tomatoes 1 small yellow zucchini cut in half 1-2 Tbsp capers 1/4 cup red wine Salt and black pepper to taste Heat the olive oil in medium sized frying pan over medium heat. Add the chopped garlic, the oregano and red pepper stir briefly. Add the onion and stir, cooking until the onions start to become translucent. Add the tomatoes zucchini and cook, stirring frequently until the tomatoes begin to split. Add the capers and break open the tomatoes (if they haven't split open already. Add the wine and stir, then let simmer about 5 minutes to let the alcohol evaporate and the flavors blend. Top bowls of pasta with 2-3 scoops of the sauce and sprinkle with parmesan cheese if desired. This serves two good sized helpings but could probably make three smaller portions. Enjoy!
