Hello All, Thanks for welcoming me to this group. I am South Indian-born

vegetarian who loves to eat spicy, tasty and delicious food. I especially love

variety and am constantly on the lookout for easy recipes. Here's one of my

favorite Indian salads:

Ingredients:1/4 cup moong dhal (yellow-colored tiny oval-shaped split peas; one

can find it in an Indian grocery store)2 medium sized carrrotssalt to tasteGreen

chillies, optional, as neededCoconut, optional, 2 tbsp

Procedure:Soak the dhal for about 1/2 hour. Shred the carrots, mix with soaked

dhal and add salt. If using coconut, shred and add. If using green chillies,

split down the middle and add to the mix. Refrigerate to meld the flavors

together. Other garnishes like cilantro can be added just before serving. Lime

juice can also be added to give some tang.

Happy cooking, Cheers!!!

Jai
