hi everyone,

 

would like share this one recipe with all of you

 

vegetable curry, it sounds cliche recipe but very diffnt and whole lot

healthier.

 

1 potato chopped very small

1/2 head of cauliflower grated

1/2 cup of peas

1/2 cup shredded carrots

1/2 cup worth chopped green beans

1/2 eggplant chopped( I like it so I go for 1)

1/2 cup finally crushed roasted unsalted peanuts

1 inch peace of ginger grated or finally chopped

1 serrano pepper chopped

1/2 tbsp cuminseeds

1 tbsp oil

salt as per taste

 

 

method

 

boil all the vegs together with water about 1 inch above the vegetables in the

pot, or pressure cook until 1 whistle with some salt. it should be tender not

all the way mushed, so can retain its shape.

 

now let these vegetable mixture be on the gas stove on low to low-med level

heat.

 

now add the ginger and 1 serrano chilly in it as well as add the peanut mix in

the mix veg curry too and continue to heat the veg let it all get mixed up and

lil' mushy at this time. you can use the hand blender to mix lightly on low

speed.

 

now in one frying pan put the oil and put it on med-high. when it gets hot, add

the cumin seeds and see it change color at this time add this to the mix

vegetable curry mix mentioned above. let the curry sizzle for 5 mins. take it

from the stove

 

serve it with naan, pita or rice.
