Guest guest Posted July 11, 2009 Report Share Posted July 11, 2009 Mushroom Trio Sauce 1/2 oz. wild dried mushrooms, reconstituted 1 shallot, chopped 1/2 cup domestic mushrooms, sliced 1/2 cup fresh shiitake mushrooms, sliced 2 tbsps. fresh parsley, minced 2 tsps. vegetable oil 1/2 cup veg broth 2 tbsps. Madeira wine or grape juice 1/2 tsp. dried thyme 1/2 tsp. salt Soak dry mushrooms in 1 cup hot water 20 minutes to reconstitute. Rinse quickly under cool running water to clean. Meanwhile, chop shallot. Slice fresh mushrooms. Mince parsley. Heat oil in a 3-quart saucepan over Medium-High heat; sauté shallot 1 minute. Add mushrooms; sauté 3 minutes longer. Add broth, Madeira, thyme and salt. Bring to a boil and reduce heat to Low. Simmer 8 to 10 minutes. Remove from heat and stir in parsley. Serves 4 to 6. Spoon over whatever you like.
