hello and here's a recipe

 

 

Hello all:

 

So happy to join your group. I have recipes for a bunch of Indian vegetarian

dishes that I'd like to share with you, and here's one:

 

Vegetable stew in coconut milk

 

Ingredients (for 4 people)

Carrots (large): 2; Yukon potatoes: 2 (large); broccoli: 1/2 pound; green

onions: 4 to 6; garlic: 2 cloves; a pinch of turmeric, 3/4 tspn. salt and fresh

cilantro, hot green chillies: 2. Coconut milk (organic): 1 can.

 

Method

 

Sautee green cut green onions until onions become transluscent. Set aside.

Boil cut carrots -- make sure they remain crunchy, potatoes cut into one-inch

cubes, and broccoli broken into crowns. Add boiled veggies, sliced chillies to

sauteed onions. Add turmeric and salt and cook over low flame for about 5

minutes. Then add coconut milk and cook for no more than five more minutes.

Garnish with fresh cilantro chopped fine.
